HOW TO USE IT
The harmonious balance between bitter and spicy makes this oil a perfect pairing with fish (cooked and raw), salads and roasted vegetables. Grill some aubergines, and fill them with goat cheese, parsley and garlic, then finish off with a drizzle of this precious green gold.
WHY WE LOVE IT
The emerald green colour, a bouquet of flavours reminding us of almonds, artichokes, tomato and freshly cut grass. It speaks of Sicily... which is why we love it so much.

The Russo family lived in Belpasso, near Catania for the past six decades. There, an incredible passion for olive oil was inherited by Giusi from her father, and the tradition of producing an incredibly products continue to this day.
