Pale pink with salmon reflections. Fine and persistent perlage.

100% Pinot Noir
Soft pressing, plus 1st fermentation in steel vats at 14°C. Second fermentation in the bottle for 1 month at 14°C.
In the bottle on yeasts for 30/40 months with a regular remuage of the bottles.
12.5% abv 1g/l residual sugar
