From the Sibillini Mountains in Umbria, the famous Lentils of Castelluccio are the tiniest yet tastiest lentils around. Awarded the IGP denomination (Protected Geographical Indication), these tiny legumes are rich in fibres, protein (25%), minerals and vitamins. Being grown at high altitude, it also means they are free of pesticides.
HOW TO USE IT
Simple lentil soup, add sausage to make it more wintery. Also great in salads, Ottolenghi makes it with Gorgonzola cheese and it is utterly delicious!
