From Molino Pasini, an ingredient that will surely make our community of bakers very happy. “Nuage” is an instant dry yeast that activates at ambient temperature, versus the normal dry yeast that should be dissolved in warm water at 28°C. Great for bread and pizza!

 

HOW TO USE IT

Add in the quantity stated in your recipe, but please keep in mind that this activate at room temperature too. If you freeze it, or put it in the fridge, it will start as soon as getting back to room temperature. 

Nuage replaces fresh yeast at 60%: 10g Fresh = 6g Nuage.
